What an eventful December!

This December, in the midst of celebrating the birthdays of our two youngest, we also packed up our home and moved. Whew. I mean, whew! Moving is stress-free and totally awesome, said NO ONE EVER. Moving while six months pregnant... don't think I need to even go there. It was pretty miserable, but we got through it thanks to some dedicated friends and our parents. (Plus, these boys of ours are strong now, so they were a huge help!)

I know I haven't written very regularly over these past several months, but I'm looking forward to jotting down my thoughts a bit more. I really don't want to forget the details, and this is such a great way of recording all of them. Yet between homeschooling, morning sickness, the stress of keeping the house show-ready and then having to leave for hours at a time at random times, it was impossible for me. And speaking of school, everyone has been enrolled in our new local schools for several weeks now and they are loving it. We all are. It was exactly what we'd been needing and I feel like a huge weight has been lifted off my shoulders. I miss them all during the day and I have fond memories of the special things we've done, but they are happy, and I am happy. I've definitely had my moments of guilt, but after much prayer and reflection, this is the path God led us to and things couldn't feel better for us right now.

It's been a little crazy trying to decorate for Christmas at the same time as unpacking boxes and organizing things around the new house, but this move has been a smooth one. It hasn't been filled with angst and regret like our other move three years ago. We feel so thankful to be here.

I have to go say goodnight to my little boy who is not so little anymore. I'm so glad he still asks me to come in and tuck him in and say prayers together. Here he is graduating from Basic Training, top in his class! We're so proud of him and so happy for him- he's been talking about serving in the military and flying planes since he was a really little guy! What a joy as a parent to help him achieve his goals and dreams.

Finishing Touches

Good morning! Just popping in to say howdy! I am so, so, SO excited about being nearly finished with our upstairs bathroom! And we've also conquered several other items on that once-too-big To Do List, so now the list has shrunk back down to size and feels much more manageable. Actually, there's not a whole let left to do. Now that I've said that, something will inevitably break (or break down), like the garage door that split in two last year, or the pipe that burst, or the... Nooooooo!

This is a pic from our room last summer. We had a wild and crazy night painting and redoing the closet before our trip to Maine, so I'll share that soon. The outdoors projects have been completed- I even added two new plants/trees yesterday, so that is done, done, and done. I've got lots to share, now to just find the time to take pictures! We're soaking in this last full week of summer, and it isn't the house I'm taking all the pics of.  =)

Best Homemade Rolls Recipe & a House Anniversary

Today is by far the coldest day we've had yet this fall, one of those perfect Beef Stew kinds of days. With rolls!  Delicious, homemade, melt-in-your-mouth rolls. And I've finally gotten around to sharing the recipe!

Best EASY Homemade Yeast Rolls

1 1/4 cup very warm but not hot water
1/3 cup vegetable oil
2 Tbsp dry, active yeast (or 2 packets)
1 Tbsp honey
1 Tbsp sugar (more or less)

In large bowl, gently mix the ingredients and let sit about 15 minutes to proof.

Next, add the following & stir together with a sturdy wooden spoon:
(You can use the dough hook on your mixer but it only takes a few moments and a little muscle to stir the dough by hand.)

1 egg
2 1/2 cups unbleached flour (you can use bread flour too)
1 cup whole wheat or white whole wheat flour
dash salt

Sprinkle additional flour onto your kneading surface and turn out dough; knead until smooth and elastic- sometimes this takes several minutes, but little helpers don't seem to mind. =)


I use a small plastic square and slice off pieces to shape into the rolls- keep the ball of dough flat in your hand and gently turn under the sides, pinching them in place on the underside. Place each roll in a lightly greased 13 x 9 baking dish/pan. Have a smaller (8 x 8 or 9 x 9) dish ready to go as well because sometimes you'll have enough dough to make extra rolls. This is a wonderful problem to have!  ;)

Let rolls rest & finish rising in pan for about 10 minutes while oven preheats to 400 degrees. Bake for 8-10 minutes or until golden brown. Easy and delicious! These rolls pair fabulously with my Hearty Slow-Cooker Beef Stew.

Tomorrow marks our one-year anniversary of owning this house! I remember so clearly that I lugged over the Crock-pot, the veggies and meat already prepped, a tube of chocolate chip refrigerated cookie dough & a baking sheet, and all the utensils we would need in order to eat our very first meal in our new home the day we closed. It would be another three weeks before Move In day, but it was a special night for us.

Lots of times I get so annoyed with myself for not having this or that finished, but we've worked really hard throughout the year to make this place feel like home. And it finally does! Here are some pictures of the changes we've made:

I just spent 10 minutes looking for a post for either of these gardens...and nothing!
I'll put one together when it's grey and freezing and I'm dreaming of getting my hands in the dirt

I haven't shared any of our kids' bedrooms because, well, I'm busy and haven't bothered had the time. I'm still deciding what to do in the bathroom upstairs, but I painted the walls (and heater!) and am so smitten with the color! Just gorgeous! We were about to buy a vanity, sink and all the powder room hoopla when the garage door went and broke. As in, broke. Can't open or close, and thankfully the glass windows didn't shatter into a million zillion pieces. Anyhoo, that gets replaced Monday, so the ugly bathroom stuff stays put for now.
