This is our faithful go-to breakfast around here during the summer...hands-down our favorite!
It's easy, quick, and there's even fruit so it has to be good for you!;)
Here's what you need:
1/2 cup all-purpose flour (we use unbleached flour- so much better for ya!)
1 Tbsp granulated sugar
1/4 tsp salt
1/2 cup milk
3 eggs
cooking spray **
9- or 10-inch round cake pan or oven-safe skillet pan
**optional- 2 Tbsp butter or margarine**
Here's what you do:
Heat oven to 425 degrees F.
In medium mixing bowl (I use a large liquid measuring cup/bowl), whisk eggs, add milk and whisk some more.
Add dry ingredients and whisk together until well blended and "smooth." Some recipes say to use a blender, which I've never done, but it sounds like a good idea.

I use spray to coat the cake pan so I simply pour the liquid mixture into the sprayed pan and place in the oven to bake.
If you want to use butter, place the 2 Tbsp in pan and put pan in oven for 2-3 minutes for butter to sizzle and melt. Remove from oven, tilt to coat, and pour mixture into pan. Return to oven WITH oven mitt (I have forgotten this...ouch!!!) to cook for 14-18 minutes or until golden brown and "puffy."
It's SO much fun to turn on the light and watch it puff up!

I prepare the fruit while the pancake is cooking. We love sliced strawberries and kiwi, but we also like sliced peaches, pears, blueberries and raspberries. Slice the pancake like a pie and top with fruit. We sprinkle a little powdered sugar over all...and it's ready to devour eat. :) Easy peasy and so yummy!

This one was so fluffy and spongy, but they don't always come out quite like this....though they're always yummy! Must be the less humidity in the air today. Or maybe the secret is to whisk the mixture really, really well. Yeah, we'll just go with that. :)
