Favorite One-Bowl Apple Squares

There is that wonderful, familiar crispness to the air these days, and I am loving it! We haven't seen the sun in nearly 5 days (with the exception of a very brief visit this morning), but the cooler air feels fantastic!

In the spirit of fall, I thought I'd share a favorite autumn recipe with you...




Well, actually, my eldest son has recently informed me that he "can't stand those things."

Say what!?!

He's been gobbling them up for a decade now, so.... I think he's just lying.  =)

Here's what you need:
1 1/4 cup sugar
1/4 cup light or dark brown sugar
3 eggs
2 cups {unbleached} flour
1 tsp baking powder
1 tsp cinnamon
1/2 tsp +/- salt (we use sea salt)
1 tsp vanilla
3/4 cup cooking oil
2 large apples, peeled, cored and thinly sliced

I "core" apples by simply slicing around the center, leaving behind a squared core
Next I lay the cut piece of apple flat and slice thinly
I'm only mentioning this because my mother hates it, ha ha!
But I insist it works best and is faster- you decide!
obviously I'm not the type to have every bit of peel removed, ha

Here's what you do:
  • Preheat oven to 350 degrees F
  • In large mixing bowl, beat together eggs and sugar *
  • Add oil **
  • Stir in dry ingredients
  • Fold in apple slices gently
  it's fine to have some slices not even covered by batter ~ they will cook right in!
  • Spread into greased 13 x 9 pan & bake 40-45 minutes

Cool pan on rack before slicing and...enjoy! 
 
*the original recipe called for only white sugar, but I think adding brown sugar adds a lot more flavor!
**original also called for 1 cup oil, but I find anything around 3/4 cup adequate- too little makes it kind of dry and crumbly

We have a fun family tradition with these apple sqaures...
the kiddos and I make them every fall for our very first hike of the season.
Which is going to be this weekend, yay!
So go make yummy apple squares and then take a hike!  ;)
